Chef Brian was born in Worcester MA. He attended culinary school at Johnson & Wales University. After interning at the prestigious two Michelin star restaurant, Jean Geroges, Brian fell in love with NYC and decided to move there upon graduation.
Working his way through an array of restaurants such as Aureole, Momofuku Ssam Bar, and Bergen Hill in Brooklyn Brian honed his skills and experience and decided it was time to leave NYC. Brian then moved to Colorado to spend more time outdoors all while working various chef roles in Denver at Cholon Modern Asian, The Fifth String, and D Bar.
In March of 2023, Brian was wooed away from the big city and made his transition to Vail taking the Sous Chef role at Mountain Standard. He brings his outstanding talents and inspiration to the team at Mountain Standard with his usual quiet humility.
On his days off you can find Chef Brian in any of the local streams fly fishing or on the disc golf and traditional golf courses.
